Preheat  oven shortly before cooking the fish: 350°F, 180°C, Gas 4


  • 1 whole sea bass, about 2 kg [4 – 4½ lb]
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh lemon juice
  • 4 fluid oz [1/2 cup or 8 tablespoons] olive oil
  • 4 teaspoons dried oregano

Mix all the above  ingredients together, except for the bass.  Put the fish on a large piece of foil, double thickness, which is large enough to fold over the fish and easily enclose it. Pull the foil up around the side of the fish, effectively creating a foil dish.  Pour in the marinade and seal the foil snugly about the fish, ensuring there are no leaks.

Leave for 2 – 3 hours in the refrigerator. Remove the fish from the refrigerator and place on a shallow baking tray or oven tray, still tightly wrapped in the foil.  Bake about 45 minutes, testing the fish with a sharp knife; it will be opaque when done.

Remove the fish from the marinade in which it has been cooked and serve.
