  • 1 x 6oz [175gm] turkey breast steak,
  • ¼ tbsp grated lemon rind,
  • 1 tablespoon chopped fresh sage or 1 teaspoon dried sage,
  • 1 tablespoon lemon juice,
  • ½ tablespoon vegetable oil,
  • salt and freshly ground black pepper,
  • fresh sage leaves and lemon slices to garnish.

Place the turkey steak between 2 sheets of cling film and beat with the side of a rolling pin until about 5mm thick. Sprinkle with salt and pepper. In a small bowl, combine the lemon rind, sage, lemon juice and oil. Stir well to mix. Put the turkey in the lemon mixture and rub in well. Leave to marinate for 20 minutes  Heat a frying pan and fry for about 2 minutes on each side until golden. (For a delicious alternative substitute fresh tarragon leaves for the sage.)
