Preparation time 20 minutes plus 2 hours marinating time [or leave to marinate overnight]
Cooking time 6 – 8 minutes

INGREDIENTS

  • 1 x 6oz [175gm] turkey breast fillet, skinned,
  • ½ tablespoon lemon juice,
  • ½ tablespoon olive oil,
  • pinch ground cumin,
  • pinch dried oregano,
  • salt and freshly ground black pepper.

Place the turkey fillet between 2 sheets of cling film and beat with a meat mallet or the side of a rolling pin until thin. Blend the lemon juice, oil, cumin, oregano and pepper in a shallow dish. Add the turkey and turn to coat. Cover and leave to stand for at least 2 hours, or chill overnight. Heat a heavy-based ridged frying pan. When hot, remove the turkey breast fillet from the marinade. Season lightly on both sides with salt to taste, cook for about 3 minutes until browned turn and cook the meat on the other side for a further 3-4 minutes until it is cooked through.
