Serves 4 [allows for two chicken thighs each]
Preparation time 20 minutes plus several hours [or overnight] to marinate
Cooking time 1 hour
Preheat  190°C, 375°F, Gas 5

INGREDIENTS

  • 8 chicken thighs,
  • 1 teaspoon dried or chopped fresh thyme,
  • juice of 1 lime,
  • 2 tablespoons olive oil,
  • salt and freshly ground black pepper,
  • lime slices and sprigs of coriander to garnish.

Put the chicken thighs in an ovenproof dish.

Mix together the salt and pepper, thyme, lime juice, and olive oil in a small bowl and spoon evenly over the chicken thighs. Cover and leave to marinate in a cool place for several hours or overnight in the fridge.

Bake in a covered dish for 1 hour, removing the cover for 5 minutes at the end of cooking time to allow the chicken to brown. Serve hot, garnish with lime slices and coriander.
