Allow two eggs per person
Preparation time 5 minutes
Cooking time  10 – 15 minutes
Preheat oven to very low heat 250 F, 120 C for the luxury method only

INGREDIENTS

Per person:

  • 1 teaspoon olive oil
  • Two eggs
  • 2 tablespoons water
  • Salt and pepper to taste

Quick cooking method

  1. Crack the eggs into a bowl
  2. Add the salt and water  [1 tablespoon of water for each egg]
  3. Do not whisk the eggs, but mix them with a fork until the eggs are broken into the whites, retaining a streaky white and yellow look
  4. Put the olive oil into the frying pan and allow it to get hot enough to sizzle. When you add the egg mixture it should start to cook right away, but don’t let the egg mixture boil.
  5. Cook the eggs over a medium to low heat, breaking them up with a wooden spoon so they don’t turn into an omelette.
  6. Turn the heat off under the pan just before the eggs are fully cooked. The heat of the pan should finish the cooking process and this stops the eggs from being overcooked.
  7. Sprinkle with pepper to serve

Luxury Cooking Method

  1. Break the eggs into the mixing bowl.
  2. Do not whisk the eggs, but mix them with a fork until the eggs are broken into the whites, retaining a streaky white and yellow look.
  3. Add the water [1 tablespoon of water per egg]
  4. Add the olive oil, salt and pepper to the egg mixture.
  5. Pour the mixture into a heavy-bottomed pan, on a very low heat and stir slowly with a wooden spoon.
  6. After a few minutes the mixture will start to thicken – do not let the egg mixture boil;
  7. As soon as it starts to thicken, transfer to an oven proof dish and place in a warm oven.
  8. Leave for five to ten minutes until cooked to the desired consistency and serve. 

Variation: The addition of strips of smoked salmon makes Eggs Royale.
