  • 1 x 5oz [150gm] Salmon steak


  • 1 clove garlic, peeled and  halved
  • ½ teaspoon sea salt,
  • 1 tablespoon chopped fresh coriander,
  • 1” [2 cm] piece of fresh ginger, peeled and quartered.
  • Grated zest of 1 lime,
  • ½ teaspoon ground cinnamon,
  • ½ teaspoon ground cumin,
  • 1 tablespoon olive oil,
  • ½ teaspoon freshly ground black pepper

A few hours before cooking the salmon, combine the marinade ingredients and spread over the salmon steak. Cover with plastic wrap and set aside for the flavours to develop and permeate the salmon.

Preheat the grill to its highest setting. Place a large oiled baking dish under the grill for a minute to heat. Remove the baking dish from under the hot grill. Remove the salmon from the marinade, discarding all the marinade. Place the salmon on the hot baking dish. Position the tray 3 inches [7cm] from the heat and grill the salmon for 7 minutes exactly. Transfer to a warm plate to serve.
