Preparation time 20 minutes plus another 30 minutes marinating time.

INGREDIENTS

  • 1 x 265g salmon steak
  • ½ teaspoon coriander seeds,
  • ¼ teaspoon cumin seeds,
  • 1 cardamom pod, bruised,
  • ¼ inch [1/2 cm] cinnamon stick,
  • ¼ teaspoon ground turmeric,
  • ¼ teaspoon chilli powder,
  • ½ tablespoon olive oil,
  • ½ clove garlic

Dry-fry the coriander, cumin, cardamom and cinnamon in a small heated frying pan, stirring over medium heat until fragrant. Stir in turmeric and chilli powder; remove from the heat and transfer to a mortar and pestle; crush the spices until ground finely. Transfer to a large bowl. Stir in the oil and garlic. Add the fish, turning to coat in the marinade. Cover; refrigerate for 30 minutes. Remove the fish from the marinade and cook under the grill for 5 – 6 minutes each side.
