  • 4 rashers bacon, cut into 2cm squares
  • 8 prepared scallops, including the corals [try to use scallops that haven’t been frozen as frozen ones tend to leak water]
  • 1 large orange,
  • 3 teaspoons lemon juice

Fry bacon, set aside, keeping warm.

Fry scallops in a single layer in a non-stick pan, 1 – 2 minutes each side until they are a golden colour. Add salt and pepper to taste.

Combine bacon and scallops with orange segments and lemon juice.
