Makes 10 skewers, each with 3 prawns
Preparation time 20 minutes, plus you need to allow for 2 hours marinating time
Cooking time 10 minutes


  • 30 medium sized prawns
  • 15 rashers bacon, cut in half
  • Lime slices to serve
  • 10 skewers  [wooden skewers will need to be soaked in water for 30 minutes before using]


  • 6 tablespoons olive oil
  • 1 tablespoon chopped fresh thyme  [or 1 teaspoon dried]
  • 1 tablespoon chopped fresh  rosemary [or 1 teaspoon dried]
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 4 cloves of garlic, halved

Place prawns in a bowl with olive oil, herbs, spices and garlic. Marinate 2 hours. Discard the marinade.

Cut bacon rashers in half crossways [not lengthways] so you end up with two short wide pieces of bacon. Wrap each prawn in half a rasher of bacon.

Place three prawns on a skewer and cook under a hot grill or on a barbecue, or in a frying pan for 4 – 5 minutes each side or until bacon crispy and prawns cooked through.

Serve with lime slices.
