This is good hot or cold.

Serves  4 – 5
Preparation time 20 minutes
Cooking time  1 hour 15 minutes
Preheat  180°C, 350°F, Gas 4

INGREDIENTS

  • 1 lb [500gm] finely minced pork [ask your butcher to mince it twice if you don’t have a blender]
  • 1 lb [500gm] finely minced ham [ask your butcher to mince it twice if you don’t have a blender]
  • 4 egg yolks, beaten
  • 4 egg whites beaten into stiff peaks that stay standing upright.
  • salt and pepper to taste

Place pork, ham, egg yolks, salt and pepper into a blender and blend until just combined. If you don’t have a blender, ask your butcher to put the meat through the mincer twice. Gently fold in the egg whites, taking care not to beat the air out of them. Shape into a loaf, and rather than placing into a loaf tin, place it into a roasting pan, moulding it into a loaf shape with your hands as you do so. Cover with a lid or foil and cook for 1 hour and 35 minutes. Let stand to cool a little before serving; this will allow it to hold together better.
