Cooking time 10 minutes
Preheat grill to high when ready to cook.

INGREDIENTS

  • 1 teaspoon finely grated lemon rind
  • 1 tablespoon lemon juice
  • ¼ teaspoon dried chilli flakes
  • 1 pork chop approximately 250 grams [8oz]

Combine all ingredients, except the chop, in a bowl and mix well. Add the chop, ensuring it is well coated with the oil mixture.

Cover and regfrigerate for 2 – 3 hours [or overnight if you wish].

Remove the chops from the marinade and cook under a preheated grill, turning once until cooked through, about 5 minutes each side. Serve.
