  • 4 x 5oz [150gm] salmon fillets,
  • ¾ cup fresh grapefruit juice, pink or ruby
  • 2 teaspoons olive oil

Select a frying pan which has a good fitting lid. Heat the oil to a low temperature, then add the salmon fillets and grapefruit juice. Put the lid on the pan and simmer over a low heat until the salmon is cooked. This will take about 6 – 8 minutes. Transfer the salmon fillets to heated serving plates, reserving the cooking juices. Increase the heat and boil the juice, uncovered, for about 2 minutes until reduced to ½ cup. Pour a small amount over each salmon fillet.
