Preheat the grill

INGREDIENTS

  • 1 large orange,
  • 1 x 8oz [250gm] salmon fillet
  • 1 teaspoon red wine vinegar,
  • cracked black pepper as desired.

Peel the orange, ensuring you also remove the pith from under the peel. Slice crosswise into 1/4 inch [1/2 cm] rounds.
Season the salmon fillet with salt and place under the pre-heated grill about 4 to 6 inches from heat.  Cook for 15 minutes or 10 minutes per inch of thickness.  Remove from under the grill just before it is cooked through. Sprinkle the salmon with vinegar. Arrange orange rounds on top. Sprinkle with cracked black pepper. Grill 1 minute longer. Serve.
