Preheat oven to  200°C, 400°F, Gas 6


  • 1 chicken for roasting
  • 1 grapefruit or orange
  • ½ teaspoon garlic powder
  • Salt and pepper

Halve the orange or grapefruit. Squeeze fresh grapefruit or orange juice over a whole chicken, reserving the citrus fruit skins. Place the salt and pepper, garlic powder and grapefruit/orange skins inside the chicken. Roast 15 minutes per lb [7 minutes per kg].
