Serves 8  [allowing 1 chicken breast per person]

INGREDIENTS

  • 8 boneless breasts
  • Pinch of salt
  • ½  teaspoon ground black pepper
  • 3 – 4 tablespoons lemon juice
  • 4 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • ½  pint [300 ml] orange juice
  • 8 rashers finely chopped bacon

Sprinkle the chicken breasts with salt and pepper.
Place the bacon in a large frying pan and cook over a moderate heat for 2 minutes.
Add the chicken breasts to the bacon and cook for about 15 minutes, until cooked right through.
Remove the chicken and bacon from the pan and keep warm.
Add the  lemon and orange juice to the pan.
Add fresh parsley and basil, cook for 2 minutes at a brisk boil, stirring constantly.
Pour citrus sauce over chicken and bacon and serve.
