Preparation time   Allow at least 4 hours marinating time and 1 hour chilling time.
Cooking time  5 – 10  minutes


  • 400 gram [14 oz] packet of chicken livers
  • Orange Juice, enough to soak the chicken livers in.
  • 1  Tablespoon oil
  • Salt and Pepper to taste
  • Soak chicken livers in strained orange juice for a minimum of 4 hours or preferably overnight. Herbs may be added to the orange juice if you wish.

When ready to prepare, move the chicken livers to a frying pan, discarding the orange juice. Sauté the chicken livers in oil, seasoning with salt and pepper. Blend in the blender. Put in individual serving dishes or a paté terrine and chill.
