INGREDIENTS

  • 4 chicken breast fillets, skinned,
  • fresh mint sprigs and orange, lemon or lime slice to garnish.

For the marinade:

  • Finely grated rind and juice of ½ orange,
  • Finely grated rind and juice of ½ small lemon or lime,
  • 2 tablespoons olive oil,
  • 2 tablespoons chopped fresh mint,
  • ¼ teaspoon ground cumin,
  • salt and freshly ground black pepper.

Cut the chicken into 2.5cm/1in cubes.

To make the marinade, mix the ingredients together in a bowl.  Add the chicken cubes and leave to marinate for at least 2 hours.

Thread the chicken pieces on to skewers and barbeque or grill at a moderate temperature for 15 minutes, basting with the marinade and turning frequently.

Garnish with mint sprigs and orange, lemon or lime slices.
