Preparation time 30 minutes

Cooking time: Allow time to cook the chicken breasts and also time for them to cool. Also allow time to make a grapefruit sauce from the sauce section of recipes.


  • 4 cooked chicken breasts, diced
  • 2 pink grapefruit, peeled and segmented. Click here to see a video on how to quickly do this ensuring you end up with grapefruit which has no skin and no pith– but try a smaller knife!
  • 2 tablespoons fresh thyme, finely chopped
  • 3 tablespoons grapefruit vinaigrette

Place all in a bowl and mix well. Serve.
