Shellfish

The term shellfish is somewhat misleading as shellfish are not related to fish at all.
Included in the shellfish category are:
• Crustaceans: shrimp; prawns; lobster; crayfish; crab
• Molluscs: some have paired shells e.g clams, mussels, oysters, and scallops; some have a single spiral shell e.g winkles, and some don’t have shells at all e.g squid; octopus; cuttlefish

Serves  5
Preparation time 5 minutes plus 30 minutes marinating time.
Cooking time 2 minutes

Ingredients

  • 1 lb [500 grams] medium prawns, shelled and deveined.
  • 2 oz [65 ml]olive oil
  • 1 teaspoon cayenne pepper
  • 1 teaspoon chilli powder
  • 1 teaspoon ground cumin
  • ½ teaspoon ground white pepper
  • Several grindings black pepper

Combine all ingredients except the prawns to make a marinade. Mix the prawns with the marinade and let sit for 30 minutes. Oil a frying pan and bring to a high heat. Toss in the prawns, shaking the pan as they cook. They’re ready when they are pink and start to curl – this will only take 1 – 2 minutes. Season with salt and serve.
