Makes 250gm [½ lb] king prawns
- 250g [½ lb] uncooked medium king prawns,
- 125g [¼ lb]scallops, roe removed,
- 1 teaspoon olive oil,
- 1 clove garlic, halved,
- 1 teaspoon lemon juice,
- 1 tablespoon white wine vinegar,
- 1 tablespoon chopped parsley.
Shell and de-vein the prawns, leaving the tails intact; combine with scallops, oil and garlic in a medium bowl.
Cook in a heated oiled frying pan until they have just changed colour. Remove from the heat; cover to keep warm.
SAUCE: Simmer the lemon juice and wine vinegar in small saucepan, uncovered, about 1 minute. Add the seafood; simmer, uncovered, until hot. Discard the garlic. Serve with sprinkled chopped parsley.
