TURKEY & CUMIN  SCOTCH EGG

This variation of the above Scotch Quail’s Egg recipe requires 1 tablespoon ground cumin [for 6 eggs].

Make the recipe as above for plain Scotch Quail’s Eggs, adding 1 tablespoon of ground cumin to 300grams of turkey mince.  Mix this in well before shaping into eggs.

 

BACON  & TURKEY  SCOTCH  EGGS

Instead of using 300gms Turkey mince, this variation of the Scotch Quail’s Egg recipe requires:

  • 6 quails eggs
  • 150 grams [50z] bacon [any type], finely minced
  • 150 grams [50z] turkey mince

Taking the recipe for plain Scotch Quail’s Eggs above, replace half the turkey mince with finely minced bacon, i.e. 150 grams of turkey mince combined with 150 grams of finely minced bacon.  Use any sort of bacon and you can always put it in the blender to get it fine enough. Proceed to shape the eggs and cook as above.

 

BACON  SCOTCH  EGGS

This variation of the Scotch Quail’s Egg recipe does NOT require any turkey mince and instead uses all bacon to encase the quail egg. This variation of the recipe requires:

  • 6 quails eggs
  • 1 – 2 egg yolks [from hens’ eggs]
  • 300 grams [10oz] bacon [any type of bacon will do], finely minced

Taking the recipe for plain Scotch Quail’s Eggs above, replace all the turkey mince with finely chopped bacon, i.e. 300 grams finely chopped bacon. Use any sort of bacon and you can always put it in the blender to get it fine enough. Bacon can be quite wet so use 1-2 egg yolks [from hen’s eggs] to bind it together. Proceed to shape the eggs and cook as above.

 

FISH  SCOTCH  EGGS  [TROUT, SALMON, SMOKED COD OR HADDOCK]

This variation of the Scotch Quail Egg recipe is NOT cooked in the oven, and instead requires a steamer or double boiler.

This variation of the Scotch Quail Egg recipe does NOT require any turkey mince and instead requires:

  • 2 egg whites [use egg whites from hens’ eggs and you may possibly need more than two egg whites so make sure you have more to hand];
  • 300 grams [10oz] Trout or Salmon or Smoked Cod or Haddock.
  • 6 quails eggs

Taking the recipe for plain Scotch Quail’s Eggs above, replace all the turkey mince with fish, i.e. you will need 300 grams of fish for 6 quails eggs. Put fish and salt and pepper into the blender and blend to a smooth consistency. Add two egg whites [from hens eggs] and blend  again. You may need to add more egg whites to get a mixture you can mould around the eggs. This will depend on the fish used.

Mould the fish mixture around the eggs and place in a steamer. Add water to saucepan underneath the
steamer, place the lid on the steamer and steam for 10 – 15 minutes.
